Missing North Carolina
Apparentlythis is what people here in AZ call monsoon season and it rains everyday. But it rains for about 5 minutes, and it is so dry, 5 minutes later you can't even tell it has rained. What has happened to a good long thunderstorm like Texas or North Carolina! I am missing North Carolina today! I loved it there and I love that part of the country. Although I know now we have to move onto other things, someday we are going to live there again!! So I went online and was just looking at some photos. I wanted to share a few. It is such a beautiful place. My favorite season there is fall when all the leaves turn, it is awesome! There are beaches, mountains, forests, it is the best!

Mac and Cheese/Chicken tenders
I made some delicious dinner today! I saw it on Rachael Ray and wanted to try it. I made a few changes, but it was so good. Here are the recipes:
Mac and Cheese
Salt
1 pound pasta
1 tablespoon extra-virgin olive oil
1/2 pound turkey bacon, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup whole milk
Freshly ground black pepper
2 cups shredded Gruyere
Pinch freshly grated nutmeg, to taste
1 tablespoon Dijon mustard
Heat water for pasta, salt water and cook pasta to al dente.
While pasta water comes to boil, heat extra-virgin olive oil, 1 turn of the pan, in a deep skillet over medium-high heat. When oil is hot, add bacon and crisp, 5 to 6 minutes. Remove with a slotted spoon and drain on paper towels.
Heat a sauce pot over medium heat. Add butter, melt and whisk in flour. Cook 1 minute then whisk in stock and milk and bring to a bubble. Thicken a few minutes then season with salt and pepper. Melt in cheese stirring it in a figure-8 motion with a wooden spoon. Add nutmeg and mustard and adjust salt and pepper.
Drain pasta, and stir in cheese sauce to coat. Top with crispy bacon and serve.
2 tablespoons coarse sea salt
1/2 cup sesame seeds
4 tablespoons dried minced onion
1 tablespoon thyme
1 tablespoon rosemary
1 tablespoon parsley
2 packages, 1 1/2 to 2 pounds, chicken tenders
Preheat oven to 400 degrees F.
Mix the salt, seeds, onion and herbs on shallow plate then coat the chicken tenders in mixture and bake on nonstick baking sheet 18 to 20 minutes until golden and firm. Turn halfway through the cooking.

Yummy Cookies
Today I made some very good cookies! I found a recipe and tweaked it a little to make them all my own! Here is is!
Whole wheat Chocolate chip cookies
1 c butter
1/4 c sugar
3/4 c brown sugar
1 pkg instant butterscotch pudding(or you can use vanilla)
2 eggs
2 tbsp vanilla
2 and 1/4 c flour
1 tsp baking soda
about 1/2 bag chocolate chips(or really however much you want)
Cream butter, sugars, and pudding mix. Add eggs and vanilla and mix. Add flour a little at a time and then baking soda and mix. Add chocolate chips. Bake at 375 for about ten minutes. They are yummy!

Father's Day!
I know I am a day late, but I was pretty sick yesturday. I am still not feeling great, but I had to get up and get going. I have a great Dad. I thought of him a lot yesturday. He is awesome, he has a strong testimony and he is a very hard worker. He works too hard if you ask me! I have a lot of memories about him when I was younger. I remember we would go on family trips and my other two sisters and my mom would want to sleep in. But my Dad and I would always go out and get breakfast together, and then go around and take pictures! It was always so much fun. I also remember my Dad was very organized when we would go on trips. He had the trip mapped out, how many miles we would go each day and where we would stay, and fun things to do in each place. He would always take his family to the funnest places. I could write tons more about my Dad because he is so awesome! I love him!
Joe is a great Dad. Everyday he comes home from work he takes time to get down on the floor with the kids and wrestle and tickle them. They love it so much! He crawls to thier bed with them on his back. He is a great Dad. He even let me rest when I was sick yesturday and spent so much time with the boys. I love him!
(Unfortunately I do not have a picture of my Dad, seeing is how all our things are in storage, but heres one of Joe and the kids!
